Singapore, October 2025 – One of Singapore’s most treasured Indian restaurants, long admired for its storied legacy since 1971, has opened its doors with flourish in a breathtaking new space within the trendy Naumi Hotel Singapore. With a legacy of culinary excellence and decades of resilience in an ever-evolving F&B world, Rang Mahal continues to honour its familial roots while forging ahead with a progressive spirit.

The Menu – Heirlooms from the Heart
Like the opening chapter of an adventure novel, the menu sets the scene for a culinary journey and features timeless classics from North, South, and coastal India, alongside distinctive favourites drawn from cherished family recipes. A good number of dishes are also vegetarian, allowing even more palates to be satiated.

Perfect with an aperitif are Khakra & Chutney Dips ($10, V) – crisp artisanal Gujarati-style crackers served with three homemade chutneys – tangy mint, sweet mango and spiced mustard yogurt; and Edamame ($15, V, left, new) served sautéed in fragrant garlic chilli oil.
Whetting the appetite further are starters such as Maa’s Chilli Cheese Pakoras ($18, V, new) – a nostalgic creation by the mother of Director and second-generation owner Mr Surya Jhunjhnuwala – moreish cheddar and cream cheese-stuffed green chillies are battered with spiced gram flour, fried and served with a mint-beetroot sauce; and Arshiya’s Chowpatty Slider ($20, V) – so named after the daughter-in-law of the second-generation owners who loved this snack as a child, and the popular Chowpatty Beach in Mumbai, where spiced potato patties are commonly sold. The version here is made with chopped onions, chilli powder, chaat masala and cumin, then panfried and sandwiched between buns with a spread of tamarind and coriander sauces as well as ghee.

A dish that requires great tandoor-handling skills is the Paneer Mirchi Tikka ($22, V, new) – chargrilled cottage cheese with yellow chilli and hung yogurt, while chaat1 lovers will not be disappointed with the Sev Puri – Rang Mahal’s Special Chaat ($16, V) – golden shells packed with seasoned potatoes and topped with tangy chutneys and the pop-in-the-mouth Calcutta Pani Puri ($16, V) – delicate crispy deep-fried bread filled with spiced potato and accompanied by vials of tamarind-mint water.

For the main event, diners may choose from Grill Platters that arrive sizzling, Curries and Biryani – all hearty and satisfying. The Vegetarian Grill Platter ($44, V, new) consists of Paneer Mirchi Tikka, Bharwan Stuffed Chilli Pakora and Chowpatty Slider, while the Non-Vegetarian Grill Platter ($52, left, new) is a mouthwatering hot plate of Tandoori Chicken Tikka, Tiger Prawns and Lamb Seekh Kebab.
For a taste of coastal Maharashtrian cuisine, the Kokan Fish Curry ($28, new) is a well-rounded, coconut-based curry with chunks of seabass. A subtle tang from the Maharashtrian kokum2 lifts the dish, while a blend of Konkani masala lends complexity. Other curries include Old Delhi Paneer Makhani ($25, V); and Old Delhi Butter Chicken ($30) – tandoor roasted chicken simmered in a rich tomato and fenugreek sauce, finished with cream.
The Hyderabadi Lamb Biryani ($30) is a classic dum3 version that boasts moist meat and fluffy rice. Pad the meal with Burani Raita ($16, V) – yogurt infused with dehydrated garlic and breads such as Roti ($8); Naan (Plain, Garlic, Butter, $16) as well as Mint Paratha ($9).
To conclude, the homemade Nani’s Lychee Kulfi ($16, V) is a creamy ice cream that satisfies. Alternatively, the Saffron Rasmalai ($18) – soft cottage cheese dumplings served in delicate saffron milk and garnished with cardamom – is a delightfully light option.
Royal Set Lunch Thali, $38
A convenient but no less luxurious lunch choice, the thali4 offers a fulfilling meal for one on a gorgeous glass platter. Two versions – Vegetarian and Non-Vegetarian – are available and both are served with Burani Raita; Mango Turnip Salad; Green Pea Pulao and a Bread Basket. Unlimited refills are available at a $20 supplement per person.
All-Day Light Bites
10.30am to 12pm, 2.30pm to 6pm, except Sunday and Monday
A compact menu is available for anytime noshing. One may nibble on Baby Spinach, Greek Feta and Avocado Salad ($20); Garbanzo Beans Hummus and Crudités ($15) or a Chilli Cheese Toast ($18), while imbibing a hot cup of Masala Chai ($8) or coffee. Alternatively, a Lassi (from $10, Sweet, Salted, Masala Chaas and Mango) is the perfect choice for balmy days.
Sips and Tipples
The bar offers a compact and high calibre range of wines, classic cocktails and mocktails.
The Garden Within
Stepping into the open-plan restaurant, guests immediately feel at home amid a vibrant palette of burnt orange, emerald green and gold. The walls come alive with exquisite floral and peacock motifs inspired by the mythical gardens of India – symbolic realms of abundance, love and divine beauty. Here, eternal blooms and peacocks dance under the shimmering ‘sky’, while golden light bathes the space, casting a warm glow over joyful faces and shared meals. For relaxing tea time indulgence or a change of pace in the evenings, the breezy alfresco area is a welcome retreat.
The Private Dining Room
A sanctuary that is perfect for corporate hosting, solemnisations or birthday parties, the Private Dining Room comprises a dining area for up to 14 guests and an adjacent lounge area that comfortably seats eight.
